Pomace: from Nero d'Avola grapes

Distillation: The fresh pomace left from the soft pressing of the best of Donnafugata’s Nero d’Avola grape selection is saved and fermented by a method that allows for the best ‘expression’ of the aromatic legacy of this grape variety. Distillation is carried out in continuous alembic stills and a small part in copper discontinuous ones. The collaboration between Donnafugata’s technical staff and the Master distillatory creates the best blend of different distillations.
