If red wine served chilled or paired with fish seem like a heresy, we are here to make you think again.
This is not mere provocation but, on the contrary, by proceeding with logic and a pinch of curiosity we will introduce you to a new way of drinking red wine, enabling you to explore different territories and experiment with new combinations that break the rules of wine-pairing and service.
The initial premise is that of bringing to the table young red wines, fragrant and not too tannic: our Bell’Assai, Frappato di Vittoria DOC and Floramundi, Cerasuolo di Vittoria DOCG are the perfect answer to such a need.
Then it is the service that becomes fundamental: we offer them slightly chilled (15°C), both in summer and in winter, in large glasses, so that they can release all the aromatic power typical of these wines.
And what about the pairings? Certainly not all fish-based recipes are suitable to be paired, but choosing more delicate fish, tomato-based preparations or those with oriental flavours will be a winning combination.

Where are Floramundi and Bell’Assai produced?
We are located in the area of Vittoria, between the Ibleo plateau and the sea of south-eastern Sicily, a few kilometers from beautiful cities such as Noto, Ragusa, Scicli, made famous thanks to art and the adventures of Commissioner Montalbano.
It is here that you will find the winery and vineyards where Donnafugata produces the two native red varieties Frappato and Nero d’Avola, from which originate Bell’assai Frappato di Vittoria DOC and Floramundi Cerasuolo di Vittoria DOCG.
The climate is typically Mediterranean: a temperate heat, mitigated in summer by a breeze that comes from the sea, as well as by good temperature fluctuations between day and night.
What are the characteristics of the native varieties of this area?
Frappato: Frappato is one of the oldest Sicilian varieties; it loves the warm, temperate and dry climate typical of the DOC Vittoria territories.
Nero d’Avola: the King of Sicilian red grape varieties, it is cultivated throughout Sicily and gives rise to very different wines, depending on the area in which it is grown.
Usually, Frappato and Nero d’Avola are harvested between the second and third ten days of September.
